Well, I began canning today. I bought 12 pounds of strawberries to make jam. I made 21 pints of jam out of them, and still have a few berries left over to eat.

I wish that we had strawberries to pick. I've often thought that we should start a strawberry bed, but I'm not sure if I'm ready for the extra work involved. Maybe when the kiddos get a little older and more responsible.... Rolling Eyes

Anyway, I love homemade strawberry jam. We had used all of ours from last year during the winter. A couple of months ago, I really had a craving for some strawberry jam, so I bought a jar. I used it once, and it now resides in the refrigerator--the taste hardly seemed to resemble strawberries! Mad There's nothing quite like the real thing!

My mom has already frozen some rhubarb. Do you raise that? We make a strawberry/rhubarb sauce, and a cake called rhubarb surprise!

Our strawberry plants are first year and on the deck. If I get strawberries I'll have to go picking at a farm. Neutral

Rhubarb plants are on the "one of these days" I'd like to have some list. Unfortunately, "one of these days" hasn't arrived yet. I need to get a start from my mother-in-law.

We've begun harvesting produce from the garden. We've been getting lettuce for several weeks now, and we had enough yellow beans to have some with supper last night.

We've been eating broccoli for a couple of weeks, and yesterday I blanched and froze some for later--I got five freezer bags put away.

I pulled up some onions that had gotten knocked over by something (cat, dog, who knows what), and chopped those up to freeze. I froze them in 1/4 cup portions in a muffin tin, and then dumped the "muffins" into freezer bags. I ended up with 42 little portions of chopped onion.

We also pulled up a few beets yesterday, and I got 1 1/2 pints of pickled beets (not exactly a bumper crop, there!).

One of our deacons gave us a bag of huge cucumbers on Wednesday evening. I cut those up, and now we have 8 quarts of cucumber apple rings (only I didn't cut them in rings--too time-consuming!).

Another freezer bag of broccoli tonight.

Our lettuce was much too bitter to eat (we've had highs in the 90s for some time now), so it got tilled under, and we planted beans there.

I froze 3 more bags of broccoli and 56 more chopped onion "muffins". I've got a bucket of cucumbers that I need to get peeled and cut up for more cucumber apples.

I dug up the rest of the onions and chopped them to freeze. 60 more onion "muffins" in the freezer now.

A lady from church gave me several cucumbers, and together with the ones from our garden, I had enough to do something with. I made 11 quarts of dill spears, and 8 more quarts of cucumber apples.

Omg wow your canning now? My mom cans now too with my dad's help. They canned carrots and apple butter, apple jelly, applesauce lol! lots of apple stuff. some soup and a different kind of homemade soup and a few other things and shes into freezin stuff too. the neighbors have a big rasberry bush and had me and my brother go and pick a BUNCH of rasberrys and my mom froze all them
